If it is important to keep the dough cold during the rolling process, marble helps to keep it cool and workable. The natural coolness of them can stop butter from melting. That is the beauty of using them. Another great thing about these pins is that they are very easy to clean. I really do not know what I would do without my favorite marble rolling pin. Prices on these types of kitchen tools are really quite reasonable and they will last for many years.
